About the Property

The property includes a boutique hotel located on a 200 year old farm in Southern Vermont. It is located in the Equinox Mountain valley, with spectacular views of both the Green and Taconic Mountain ranges. The property consists of 70 scenic acres of farmland and marshland with over 2 miles of walking trails, including a mile of frontage on the Battenkill River. There are currently accommodations for 50 overnight guests.

About the Role

The Head Chef position is integral to bringing Sagras mission to life on this historic Vermont property. As the management team for the property, Sagra is converting it back to agricultural use and evolving its existing hospitality offerings, adding experiential farm programming and a restaurant to the site. The Head Chef will be responsible for envisioning how to integrate the onsite market garden and local purveyors into the food experience and education at the restaurant.

The restaurant is **scheduled to open July of 2022**. The Head Chef will work closely with the Head of Experience, Market Garden Manager, Property Owners and GM to create a beautiful and cohesive culinary program that highlights the bounty of Southern, VT.

About the Restaurant

The restaurant is located in a newly constructed, two-story building with a lofted pine wood post and beam structure and views of the farm and Taconic and Green Mountain ranges. The indoor restaurant space will be complemented by outdoor decks and a lawn overlooking a historic barn and the market garden, currently under development. The restaurant capacity has indoor seating for 60, including a sit down bar for 12, a commercial prep kitchen in the lower level and a service kitchen with a wood-burning oven on restaurant level. **Overview of Head Chef Responsibilities**

+ Define and develop the menu and F&B offerings for the restaurant & overnight component that is aligned with Sagras mission to connect people to their food and the land surrounding them

+ Assemble the culinary team to execute the program

+ Outline additional kitchen equipment and small wares needs

+ Manage dinner service and oversee breakfast and ready-to-eat farmstand items

+ Create steps of service that abide by DOH standards for the health and safety of staff and guests

+ Work with Head of Experience and GM to create cohesive steps of service between culinary and service teams

+ Work with Head of Experience and GM to create a unified culture and experience that is aligned with Sagra's mission to connect guests further to their food system

+ Assist with procurement of food products for farmstand

+ Assist with planning for guest arrival snack

+ Participate in reporting and financial assessments of operations with GM & Finance

+ Concept and staff culinary class for guests at least 2x/week (same classes each week)

**Preferred Experience**

+ Sourcing locally and seasonally

+ Spent time working on a farm and/or interacting directly with farmers

+ Opening a new restaurant or hospitality space

+ Menu development

+ Hiring and managing a culinary team

+ Running a kitchen

Compensation

This is a salaried full-time year-round position that offers benefits. Compensation will vary based on experience.
