We're looking for a Head Chef / Manager who has a love of Italian food to run our NEW upscale Pizzeria located in Pier Village, Long Branch, NJ
Duties:
- Leading a hard working team of chefs in a busy environment
- Report directly to the Chef Owners, and run all areas of the kitchen, service, and hiring/training on site
- Ensure the smooth running of the kitchen while maintaining a positive working environment for the team.
Responsibilities:
- Pizza quality, kitchen speed & service delivery
- Training and maintaining a competent chef team - providing regular appraisals
- Hitting GP and portioning figures
- Maintaining impeccable Food Hygiene standards
- Staff hiring, management, and training
- Stock ordering & supply rotation
Requirements:
- Expert knowledge of Italian cuisine (all sauces, dough, etc. will be made from scratch)
- Knowledge of Kosher food preparation standards and guidelines a plus
- Highly skilled in making various types of pizza: making and stretching dough and baking in a stone-based oven, and able to teach these skills to others.
- Experience coordinating FOH and BOH activities
- Expert level kitchen management experience - knowledge of risk assessments and food safety and hygiene in a commercial kitchen.
- Be collaborative and have excellent communication skills
