Job Title Sous Chef Job Description Attention talented Sous Chefs! Cape Fox Lodge is the premier destination in beautiful Ketchikan, Alaska. We have an immediate need for an experienced Sous Chef. The Sous Chef will assist the chef in day to day operations in the kitchen and will be responsible for scheduling on a weekly basis. Food quality and preparation times are the main focus of this position. The Sous Chef will manage labor cost on an hourly basis in the BOH starting with weekly scheduling to be approved by the chef. New staff training is a focus for this position. The chef will be developing a detailed training system for line cooks and the sous chef will be in charge of seeing it through with new hires.
Additional duties include:
Inventory control and loss prevention.
Managing shift to shift operations in the kitchen and prep areas.
Assisting in developing new menus throughout the year
Attending a weekly managers meeting with Food & Beverage Director, Mods and Chef
Running the Kitchen from the Expo line in busy season and on special event nights
Travel Requirements 0 - 10% Salary Grade Job Requirements Requirements
* Experience working as a Sous Chef or 4 years of lead line cook experience or a culinary degree
* Current food worker card
* Understanding of various cooking methods, ingredients, equipment and procedures
* Excellent record of kitchen and staff management
* Accuracy and speed in handling emergency situations and providing solutions
* Familiar with industrys best practices
* Professional, punctual, reliable
* Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
