Job Location Seascape Resort - Aptos, CA Education Level Not Specified **SUMMARY:** The Chef de Cuisine is responsible for assisting the Executive Chef on the day-to-day culinary operations. Functions include menu creation, food purchasing, and maintenance of quality standards. Also assist in cost controlling and maintaining food cost, and supervises storage, stocking, and sanitation procedures, management and training of new personnel, scheduling staff work hours, and doing performance reviews. **ESSENTIAL DUTIES AND RESPONSIBILITIES**

* Oversee the activities of restaurant and banquet kitchen and participate in the activities of the main kitchen with an Awareness of quality and costs.

* Maintain and review the prep lists.

* Inspects and approves presentation of food items to ensure that quality standards are net.

* Participate in event menu planning.

* Check completeness of mise en place of each station before service.

* Ensure the overall cleanliness and order of the restaurant kitchen.

* Control waste and spoilage through constant attention to detail.

* Assist in periodic menu review and revisions.

* Prepare and cook food.

* Communicate with kitchen management the need for food and equipment items for special functions.

* Report any faulty equipment or unsafe conditions directly to kitchen management.

* Reports all guest complaints to the Chef and assists in resolving complaints.

* Submits ideas for future goals, operational improvements, and personnel management to kitchen management.

* Consistently maintain the ability to come to work regularly and on time.

* Ability to interact positively with supervisor, management, coworkers, members, and the public to promote a team effort and maintain a positive and professional approach.

* Assume the role as Executive Chef in his or her absence.

* Monitor holding and storage operations, stocking and food rotation, and guarantee food service sanitation standards are met.

* Assure kitchen personnel is trained in best cleanliness and sanitation practices.

* Support safe work habits and contribute to a safe working environment at all times.

* Follow directions, get along with co-workers and supervisors, treat co-workers, supervisors and guests with respect and courtesy, contributes to a positive and rewarding team environment and refrains from abusive, insubordinate and/or violent behavior.

Perform other related duties as requested by the supervisor.

**QUALIFICATIONS, SKILLS & ABILITIES:**

Listed below are the qualifications that represent the knowledge, skills, and/or ability to perform this job successfully:

* Proven experience as cook.

* Experience in using cutting tools, cookware and bakeware.

* Knowledge of various cooking procedures and methods (grilling, baking, boiling etc.).

* Ability to follow all sanitation procedures.

* Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.

* Must be able to work independently.

* Must meet legal age requirements for the position.

**EDUCATION AND/OR EXPERIENCE:**

* Three to five years related experience in a high-volume, upscale environment.

* Equivalent combination of education and experience.

* Resort and/or hospitality experience preferred.

* High school diploma or equal to a GED.

**LANGUAGE SKILLS:**

* Ability to write routine reports and correspondence.

* Must speak and communicate in English.

* Must be able to clearly communicate with guests, management and coworkers.

**COMPUTER SKILLS (FOR ADMINISTRATION OR MANAGEMENT POSITIONS):**

* Proficient in Outlook and Internet applications.

**CERTIFICATES & LICENSES:**

* Must have Food Handlers certification.

* Must provide valid document(s) to work in the US.

* Valid California Driver License is required (for specific positions).

**WORK ENVIRONMENT**:

The work environment at MPCC ranges from winter time lows of 30 degrees to summer time highs to 80+ degrees. While performing these duties the employee may be exposed to outdoor and inclement weather conditions.

**PHYSICAL DEMANDS:**

While performing the duties of this job, the employee must be able to:

* Use hands to finger, handle, or feel; and talk or hear.

* Specific vision abilities required by this job include close vision.

* Lift 25-50 lbs. (for specific positions)

* Sit, stand and walk for long periods of time.

**GROOMING & UNIFORM:**

Some positions will be required to wear uniforms. Uniforms are the property of Company. Uniforms that have been tampered or destroyed will be the responsibility of the employee and disciplinary action will apply.

* Hair must be clean and kept at a reasonable length.

* No extreme dying or bleaching of hair is permitted.

* Fingernails must be clean and well-trimmed at all times.

* Antiperspirant or deodorant must be worn.

* Cologne or perfume may be worn at a minimum.

* Nametags must always be worn, unless your department has a specific policy to the contrary.
