**ESSENTIAL DUTIES AND RESPONSIBILITIES** **:** This list of duties and responsibilities is not all inclusive and may be expanded to include other duties and responsibilities as management may deem necessary from time to time. The Chef de Cuisine occasionally tastes and inspects the food to make sure the staff is preparing it correctly. He/she also ensures the restaurant complies with all sanitary and safety laws Oversee and manage daily shifts. Complete mastery of all culinary duties and positions All other duties as assigned by management **EDUCATION and/or EXPERIENCE: (Level 5)** Minimum of five years previous experience as senior management of the equivalent in a multi-venue facility. Experience creating unique culinary experiences in a resort setting. Culinary degree preferred. **LANGUAGE SKILLS: (Level 3)** Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization. **MATHEMATICAL SKILLS: (Level 3)** Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume. Ability to apply concepts of basic algebra and geometry. **REASONING ABILITY: (Level 3)** Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations. Valid Tennessee Drivers License or the ability to obtain one in 30 days Strong leadership skills and ability to motivate people Requires good negotiation and listening skills Ability to act independently with little supervision Knowledge of food & beverage menus, food preparation and presentation Efficiently handle multiple duties Excellent knife skills, food preparation and presentation skills Knowledge of HACCP standards preferred Requires the ability to operate various office equipment to include a computer, word processing, spreadsheets, voice mail, copier, fax and calculator Working knowledge of resort amenities, room designs and general golf knowledge Ability to handle stressful situations While performing the duties of this job, the employee is required to: While performing the duties of this job, the employee is required to: While performing the duties of this job, the employee is:
