**JOB SUMMARY**

Accountable for overall success of the daily kitchen operations. Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions. Works to continually improve guest and associate satisfaction while maximizing the financial performance in all areas of responsibility. Supervises all kitchen areas to ensure a consistent, high quality product is produced. Responsible for guiding and developing staff including direct reports. Must ensure sanitation and food standards are achieved. Areas of responsibility comprise overseeing all food preparation for Events and Bistro have experience in purchasing, receiving, inventory and appropriate storage of all products necessary to do so. Must possess a creative and positive attitude while promoting respect and support.

**Leading Kitchen Operations, Culinary Goals and Expectations**

* Maintain a clean, organized and sanitary environment compliant with Federal, State, Marriott and Terratron policies and procedures

* Performs daily breakfast preparation, line operations and tasks

* Provides guidance and direction to associates to achieve high performance standards

* Lead by example in demonstrating self-confidence, energy and enthusiasm

* Encourages and builds mutual trust, respect, and cooperation among team members

* Adhere to all policies and procedures put in place by Marriott and Terratron

* Establishes and maintains open, collaborative relationships with associates

* Supervises and coordinates activities and schedules of kitchen associates

* Develops and implements guidelines and control procedures for purchasing and receiving

* Establishes goals including performance goals, budget goals, team goals, etc.

* Practice and communicates safety procedures and codes to associates understanding

* Manages department controllable expenses including food cost, supplies, uniforms and equipment

* Participates in the budgeting process for areas of responsibility

* Properly date and store any food items to ensure quality and freshness in conjunction with Federal and State regulations

* Ensures all safety and brand standards are being met

**Culinary Standards and Responsibilities:**

* Monitors the quality of raw and cooked food products to ensure standards are met

* Determines how food served in the Event Center should be presented, and create decorative food displays

* Recognizes superior quality products, presentations and flavor

* Ensures compliance with food handling and sanitation standards including following proper handling and right temperature of all food products

* Collaborates with GM to ensure associates are compliant on required food handling and sanitation certifications

* Maintains purchasing, receiving and food storage standards

* Prepares and cooks foods of all types, either on a regular basis or for special guests or functions

* Attends BEO meetings to offer selling insight to the team and offer menu suggestions based on group needs

* Conducts a yearly review of the event menu, adding one new entre, lunch or breakfast option while eliminating least popular items

* Attend all Bistro departmental meetings to assist in teaching new menus or procedures as well as assist in Bistro Seasonal menu change

* Produces a new seasonal menu for the event area each season

* Manages day-to-day operations, ensuring the quality, standards and meeting the expectations of the guests daily

* Displays leadership in guest hospitality, exemplifies excellent customer service and creates a positive atmosphere

* Interacts with guests to obtain feedback on product quality and service levels

* Responds to and handles guest problems and complaints

* Ensures kitchen associates receive on-going training to understand guest expectations

* Reviews guest satisfaction results and other data to identify areas of improvement

* Actively participates in tastings for larger corporate events or social gatherings

**Managing Associate Relations:**

* Ensure uniform and personal appearance are clean and professional

* Understands and performs basic safety, security and emergency procedures of the hotel

* Solicit feedback for continuous improvement

* Identifies the developmental needs of others and provides help or mentoring to improve their knowledge and skills

* Ensures associates are treated fairly and equitably

* Administers performance appraisals to kitchen associates as well as manages disciplinary procedures and documentation

* Collaborates with Sales & Events on menu development

* Report and record any accidents, injuries or unsafe work conditions to manager on duty (First Report of Injury paperwork)

* Perform other job-related duties as needed or by the request of the Assistant General Manager or General Manager

**REQUIRED SKILLS**

**Essential Skills and Experience:**

* High school diploma or GED; 6 years experience in the culinary, food and beverage, or related professional area OR 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 4 years experience in the culinary, food and beverage, or related professional area

* Serve Safe Certified

* Proficient knowledge of Excel, and Word

* Manages kitchen department associates

* Responsible for the performance management and hiring of associates within the kitchen department

* Analyzes information and evaluates results to choose the best solution and solve problems

* Must be able to remain in a stationary position 50% of the time or constantly moving, ability to move about on property, ability to position self to clean under shelving, kitchen equipment or the floors, ability to operate a computer or other office equipment, exchange information with guests over the phone and in person, and has the ability to move equipment or weighing up to 50 pounds on property

* Must be a fast learner, obtain strong organizational skills and be able to multitask with competing priorities

* Strong interpersonal skills and can communicate well both verbally and in writing

* Ability to work with cleaning chemicals and maintain sanitary conditions

* Must be at least 18 years of age or older

* Able to work a flexible schedule and be available to work day, nights, weekends and some holidays

* Must be able to work independently, is dependable and reliable

* Maintains a professional appearance, is personable and has excellent customer service skills
