****PURPOSE STATEMENT****

The Cook's primary responsible of the cook is to prepare, season, and cook soups, meats, vegetables, desserts, or other assigned menu items.

****KEY ACCOUNTABILITIES/OUTCOMES****

* Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices

* May assist in planning menus and in devising means of using left-over foods

* Turn or stir foods to ensure even cooking; observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing with utensils

* Season and cook food according to recipes and use personal judgment and experience

* Weigh, measure, and mix ingredients according to designated recipes

* Portion, arrange, and garnish food, and serve food to waiters or patrons

* Regulate temperature of ovens, broilers, grills, and roasters

* Carve and trim meats; bake, roast, broil, and steam meats, fish, vegetables, and other foods; Wash, peel, cut, and seed fruits and vegetables; bake breads, rolls, cakes, and pastries

* Prepare relishes and hors d'oeuvres

****KNOWLEDGE/SKILLS/EXPERIENCE****

* High School Diploma

* Experience in food preparation and service, at least 1 to 2 years

* Active listening skills and good reading skills; Ability to work from written menus and standard recipes

* Thorough knowledge of the materials, methods, and equipment used in preparing food on a large scale

* Serve Safe or comparable certification

* Knowledge of food values, menu planning, and uses for left-over food; Ability to take inventory and keep records of food used

* Work well in a team environment
