About the Job:


The Chef De Cuisine (hereafter Chef) will effectively lead the back of house team at Tally's for both AM and PM service. The Chef will also be a leader in menu development, not only with featured items, but routinely rotating entrees from the menu and workshopping and developing new items with the Sous team.


The Chef will recruit and train new staff, will develop, train and promote upcoming Sous, and will use their knowledge, acumen, work ethic and leadership qualities to inspire their team and obtain optimal performance from their co-workers.


About you


The ideal candidate will have 5+ year s worth of restaurant kitchen experience, and will possess past kitchen management experience as a Sous Chef, Chef De Cuisine, or similar title.

A successful candidate will have a deep and varied repertoire of cooking styles and recipes at their command.


Tally's is very much a "New American" kitchen and located in the heartland of the United States, and the ideal Chef will be able to sample influences from a wide variety of sources and reproduce or re-interpret them in a way that is accessible, interesting, and palatable for our guests and will look for opportunities to work in local and seasonal ingredients and work with our vendors to achieve the best selection with consideration to menu price.


Duties include:

  • Purchasing food and kitchen equipment and supplies for the restaurant with quality and cost consideration.
  • Monitoring kitchen inventory and rotating and/or preparing items to prevent and minimize food loss.
  • Developing menu items and accounting for costs when pricing said items. Working with the Sous Chefs to develop featured items and/or modify existing features to increase sales and to ensure variety.
  • Monitoring back of house schedules, hiring and training kitchen employees.
  • Actively monitoring staff performance. Providing remedial training and/or constructive criticisms relevant to job performance. Addressing performance issues observed by the Chef De Cuisine, GM, or other team members. When necessary, issuing verbal warnings, write-ups, suspension and/or termination in that order.
  • Working with the General Manager and FOH team to ensure that front of house staff are knowledgeable about the menu, featured items and any 86 items.
  • Scheduling yourself for prep work, line work, and expo to maintain an eye on team performance and to role model professional conduct and workplace performance.
  • Being able to step in to fill kitchen roles on an as-needed basis either to fill gaps in coverage and/or to minimize labor costs to the organization.


Requirements:


  • Ability to lift and carry heavy loads
  • Must be authorized to work in the U.S.
  • Must be a resident of the Rapid City area or willing to relocate prior to starting.
  • Must be able to work on your feet for long hours.
  • Must be able to reliably commute to work.
