Job Details

Position Summary

This position works under general supervision to lead inmates in the Food Service Section and oversees food inventory, storage, preparation, serving and clean-up functions.

Pay Grade: 41H

Minimum Qualifications

100% -

1. Four (4) years of employment experience as a cook in a hotel, restaurant, school, military services, or correctional institutional food service organization; AND

2. High school diploma or possess a GED.

3. PROOF OF EXPERIENCE, EDUCATION, AND/OR TRAINING REQUIRED.

Duties and Responsibilities

1. Ensures food is properly cooked daily and that usable food stacks are used to produce meals.

2. Leads and instructs inmate workers to prepare food serving as they perform duties including cooking and baking various meals.

3. Ensures that a specific quantity of food is prepared and served to inmates and employees.

4. Notifies proper personnel in order to have appropriate food items ready for next day of operation.

5. Maintains a high level of sanitation in all food service areas.

6. Stores, rotates and handles food and supplies.

7. Loads food service supplies into truck and deliver to other locations within the Division.

8. Performs other related duties as required or directed.

KSA's

KSAs -

1. Knowledge in detail of proper procedures for food preparation and handling; including food storage and serving temperature requirements, shelf life, and other related information.

2. Knowledge and experienced in a high volume food operation.

3. Knowledge and experienced in using equipment for large scale production kitchens.

4. Knowledge of portion control concepts and ability to operate service lines where portion control is utilized.

5. Knowledge of how to maintain a high level of sanitation and to use cleaning supplies to obtain maximum benefit.

6. Knowledge of proper methods for storage, rotation and use of chemical supplies.

7. Ability to lead and direct inmate work teams so that duties can be performed properly.

8. Ability to lead all gender of inmates without fear or intimidation.

9. Ability to follow a recipe in large scale food production.

Special Requirements

1. Must be able to function in a prison environment.

2. Must have a valid Tennessee driver's license or secure one by date of employment.

3. Must pass a physical examination.

4. Will be required to pass a drug test.

5. Must be able to operate up to a 22 foot bob truck to transport food service supplies.

6. Must be able to stand for extended periods, walk extensively daily and lift up to 50 pounds.
