Are you a master of the art of sushi creation, with a passion for innovation and excellence? We are seeking a talented and experienced Executive Sushi Chef to join our team. This unique opportunity is to lead the Sushi department across all Experience Zuzu locations.
Your Responsibilities Will Include
- Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)
- Prepare all types of sushi, including maki, nigiri and sashimi
- Select fresh fruits and vegetables to make high-quality dishes (like avocado, mango and carrots)
- Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy sauce, when appropriate
- Manage food prep activities, like boiling rice
- Prepare exceptional meals according to standard recipes and venue specifications.
- Prepare, arrange, and plate dishes per the current menu.
- Adhere to culinary standards and regulations.
- Function as a supportive team member during their shift.
- Track, record and replenish inventory as needed and in accordance with established par levels.
- Adhere to all standard operating procedures and sequence of service standards.
- Maintain line of sight/atmosphere control by circulating through work area throughout shift.
- Comply with all safety and health procedures as well as company and departmental policies and procedures.
Skills Needed To Succeed
- Fine Dining experience required
- Experience with crafting Sushi cuisine
- Proven ability to work as a team, stay organized, multi-task, and prioritize
- Understand various cooking methods, ingredients, equipment, and procedures
- Familiar with industry best practices
- ServSafe Food Handlers Certificate required
