Summary/Objective

The Cook/Kitchen position coordinates with the supervisor and operators to ensure daily production is packaged and ready to ship. This role hits production run rates and ensures a quality end product. This role can be broken down in our tiered system as; entry level, functional, and training cook.

Essential Functions

Entry Level, 1 CK

1. Reads and understands GMP s and what BRC stands for. Practices some processes of BRC standards

2. Reads and understands all cleaning procedures and how to complete SSOP s

3. Understands how to read and transcribe receiving labels (internal lot numbers)

4. Reads and understands safety procedures, not limited to: PPE, tornado and fire safety, near miss report, LOTO, HILO safety etc.

5. Practice all necessary equipment knowledge (ie mixers/cooking kettles/ popcorn machine/ cold tables/ mixing yogurt/ line #7 caramel cooking, etc.))

6. Obtaining full knowledge and practice necessary to run at least two different enrobing lines

7. Proficient at operating up to two enrobing machines

8. Understand and practices how to complete end of day paperwork

9. Practices how to properly use each scale in the department

10. Understands the importance of product quality. Not limited to: how to process centers and pre-enrobed product, understands what thickness each product should be, correct shine, correct tempering of each coating, whether a product is under or over cooked, and what is needed for sampling.

11. Reads and understands barrel and rack sheets and how the measurements indicated on them converts to usage and how to communicate that for proper documentation and record keeping

12. Learns and completes discard paperwork accurately

Functional Cook Level, 2 CK

1. Demonstrates proper understanding of all level 1 EO duties listed above, but not limited to

2. Understands and practices where to properly store different product that is handled and worked with each day

3. Learns and practices how to complete a changeover with allergen knowledge being contained

4. Understands; ingredient openings, lot control and storage of raw and finished goods

5. Performs basic maintenance on the equipment, not limited to: pumps, all levers for adjustments and filters, etc.

6. Proficient at all cook areas of responsibility

7. Understands and performs the process for refilling melters and where to find the raw material

8. Obtaining full knowledge and practice necessary to run up to 3 different enrobing lines.

9. Participates in training lower tier cooks and helpers when needed

10. Understands and performs how to set up: stripers, extruders, and whetstones

11. Understands who to properly fill out paperwork and make the necessary corrections

12. Cleans portable mixers

13. Understands and completes sanitation work instructions

14. Demonstrates basic knowledge of MRP system

Training Cook Level, 3 CK

1. Demonstrates proper understanding of all level 2 -EO duties listed above, but not limited to

2. Develops and administers proper training to the department and the job as needed and see fit

3. Starts to learn the functions and duties of the supervisor above them

4. Trains new cooks on all functions and duties described in 1 CK and 2 CK

5. Helps the supervisor with planning and scheduling for the department

6. Understands the use of the metal detector

7. Demonstrate lower cooks are learning and growing under them

8. Obtaining full knowledge and practice necessary to run up to 5 enrobing lines

9. Use the MRP system for partial case and RM tracking

10. Host product quality trainings regarding: products, tempering, measurements etc.

1. Completes all necessary audits that is required to maintain BRC and safety standards

2. Makes suggestions on improving work procedures

3. Must be able to develop good organizational skills as to allow for timely production flow and filling orders

4. Set up workstation and make sure needed supplies are in place and ready to run.

5. Follows proper steps for starting up and shutting down enrober

6. Monitor quality of product during production; make adjustments to equipment as needed.

7. Covers up any unused product at the end of shift. If necessary, put in cooler

8. Performs necessary cleaning at the beginning and end of each shift

Work Environment

This job operates in a professional manufacturing environment. This role routinely uses standard mixing equipment. This position requires most of the work to be performed on the manufacturing floor in an area that may require hearing protection at times. This role uses raw and finished products and requires sanitation, good hygiene and good manufacturing policies to be applied.

Physical Demands

While performing the duties of this job, the employee is regularly required to talk or hear. The employee is frequently required to stand; walk; use hands to finger, handle or feel; and reach with hands and arms. This position is very active and requires standing, walking, bending, kneeling, stooping, crouching, crawling, and climbing all day. Throughout the day the employee will need to lift or pull up to 50 lbs of material, depending on product.

Position Type and Expected Hours of Work

This is a full-time position. Days and hours of work are Monday through Saturday, 5 am to 2:30 pm. Times may fluctuate depending on department and during the year to accommodate production schedules.

Required Education and Experience

Some college or experience in related fields: operations, business, food preparation, safety standards

Qualifications

1. At least 1 year of experience working in a manufacturing and food environment.

2. Demonstrate skill in using production entry systems.

3. Basic; math, writing, speaking and spelling skills
