Dough Prep/Baker

We are looking for a versatile and dedicated Dough Maker/Baker for a morning shift that starts at 6:00 am. We prioritize sourcing as locally as possible including flour, so someone who understands or is interested in learning how different flours affect the dough would be an ideal candidate. Bonus points for experience with artisanal and sourdough breads as well as pastry and desserts.

Responsibilities

  • Prepare and mix pizza dough according to recipes and procedures, with a focus on sourdough techniques.
  • Monitor and maintain the fermentation process of sourdough starter cultures to achieve optimal flavor and texture.
  • Shape and proof dough portions for use in pizza production, ensuring uniformity and consistency.
  • Shape and parbake our square dough for use during dinner service.
  • Coordinate with kitchen staff to ensure an adequate supply of dough for daily operations.
  • Assist in maintaining cleanliness and organization in the dough preparation area, including equipment sanitation and storage.
  • Collaborate and communicate with the team to develop and test new dough recipes and variations.
  • Monitor and record dough production metrics, including yield and waste, to optimize efficiency and minimize costs.
  • Follow all health and safety protocols and ensure compliance with food handling regulations.
  • Assist in other kitchen tasks, food preparation, and cleaning activities as needed during downtime.


Requirements

  • Previous experience working as a dough maker or baker in a commercial kitchen environment, with specific experience in sourdough production preferred.
  • Excellent attention to detail and precision in dough preparation, shaping, and baking.
  • Ability to work independently and efficiently in a fast-paced environment.
  • Ability to work early morning shifts, including weekends and holidays.
  • Passion for artisanal baking and a desire to contribute to a creative and collaborative culinary team.
  • Ability to lift and carry heavy objects (up to 50 lbs), stand for 8 hour periods, climb ladders and bend low to reach items.
  • Strong communication skills, collaborative nature, and willingness to problem solve independently and with the team.
  • Math skills are a must and an understanding of baker s percentages is a strong plus.
  • Flexibility, a positive team-oriented attitude, and the ability to both give and receive feedback in a constructive manner

Compensation

  • Hourly: $18-25/hr + tips
